This is one of my absolute favorites dishes of all times. The sweet and tangy flavors of the tomatillos with the árbol chiles and the sweetness of the caramelized onions are absolutely delicious. The arbol chiles give a distinctive earthy spiciness to it that is very different from a jalapeno or serrano chile. I serve it mexican rice and frijoles de la olla.
Ingredients
1 1/2 lb Boneless skinless chicken tights cut into bite size.
11 tomatillos
5 árbol chiles
3 garlic cloves minced
1 small onion diced
1/4 tsp cumin
1 tsp marjoram
Cilantro bunch
1/2 tsp coriander
1 cup of chicken stock
1 tsp salt for the sauce + salt for the chicken
Procedure
- Salt and pepper the chicken and sear it in a large pot until slightly browned. Remove the chicken and reserve.
- Add canola oil to the same pot where you cook the chicken. Add the onions and cook them until evenly brown.
- Add the arbol chiles and cook for about 2 min, add the garlic and cook slightly for 1 minute only. Add the diced tomatillos and cook until slightly tender about 5 min.
- Incorporate the chicken and season everything with cumin, marjoram, coriander, salt and pepper.
- Add the chicken stock, let it simmer until everything is soft, about 20 min.
- Add the cilantro and cook for 10 more minutes or so.
