Dairy Free Broccoli Soup.

If you are trying ditch milk products from your diet, this is a must have recipe that will give you that creamy feeling in a soup without the dairy.

It is light yet creamy and with a bold broccoli flavor. If you ever tried a broccoli soup with evaporated milk, this soup’s flavor is similar to that kind of soup. It is not like a cheddar broccoli soup that is very popular in the US.

The process is very simple. Steam the broccoli, brown some onions, blend together with chicken stock and almond milk and season with salt and pepper. That’s it.

Tips

  • Don’t skip the browning process of the onions. When given the time, onions develop a sweet flavor that deepens the flavor profile of any dish. Since this soup is very simple, you cannot skip this step which will build up flavor into your soup.
  • This recipe uses refined coconut oil. Refined coconut oil has no coconut flavor which is why I used it in this recipe. You could also use ghee or butter if you don’t have problems with it.
  • If using frozen broccoli, you could microwave it instead of steaming it.
  • Nutritional yeast gives a cheesy flavor to it and brings some important B vitamins.
  • Always use unsweetened, plain almond milk and chicken broth, never water.

Recipe for Dairy free broccoli soup.

Servings: 2-4 | Dairy free, gluten free

Ingredients

2 1/2 cups of steamed brocccoli

1/2 onion

1 Tbsp coconut oil

1 cup unsweetened plain almond milk

1 cup of chicken broth

1/2 tsp of salt

pepper to taste

1 tsp of nutritional yeast

Procedure

  1. In a medium size pot, melt the coconut oil, and add the onions. Cook the onions until golden brown.
  2. Right after adding the onions to the pot, steam the broccoli in another medium size pot until bright green and soft. If using frozen, you could just microwave it until tender.
  3. Add the unsweetened almond milk, chicken stock, cooked broccoli, caramelized onions, and the nutritional yeast to your blender. Process until smooth. (If using an immersion blender, just add the broccoli to the pot with the onions, add the almond milk and chicken broth and blend).
  4. Pour the soup back into the pot, season with salt and pepper to taste and simmer for 5 min.
  5. You could garnish with vegan crema, croutons, or even crispy seasoned chickpeas.
